
This fresh Corn Salsa makes me think of summertime as it is just so refreshing, yet simple and flavorful. With just 5 ingredients, this salsa recipe is so easy to whip up in less than 10 minutes! Plus, it’s customizable to meet your spice level requirements. I love this recipe because I also turn it into a meal, a salad if you will!

Corn Tips:
If you have access to ears of corn, fresh corn on the cob for this recipe is the best. It’s not exactly corn season right now because my grocery store didn’t have any out. So, I opted for the whole kernels in a can! Frozen corn would definitely be my last resort. If you wanted to get a more smokey flavor, throw your corn on the grill before cutting off the kernals.
Ingredients:
This recipe most likely contains everything you already have in your kitchen. 5 simple ingredients! Corn, limes, red onion, jalapeño, and some fresh cilantro. Add in some lime zest before juicing for an extra citrusy flare.

Step 1:
Dice and chop your onions and jalapeño. Drain out your canned corn. If you are using fresh corn, cut the stump off one end. Hold it vertically on your cutting board, then with a sharp knife shave down the sides of the cob. Add all to a bowl.

Step 2:
Add in fresh lime zest, lime juice, and chopped cilantro. Mix together. Add some salt for extra flavor and this is ready to serve!

Prep Time- 5 minutes
Cook Time- 5 minutes
Total Time- 10 minutes
Ingredients
- 1 can corn kernels
- 1/2 cup chopped red onion
- 1 jalapeño pepper
- 1 lime
- 1 bunch chopped cilantro
Directions:
- Chop and dice the red onion
- Chop and dice the jalapeño
- Drain out canned corn or cut from the cob
- Add together
- Zest the lime into the mix
- Squeeze out lime juice
- Chop cilantro and add to the mix
- Dash of salt for extra flavor
